Grapes and Wine

Winemaking is a very ancient profession that we have been passing down from generation to generation within our family. Cultivating the vine is the best and most natural thing that humans can do. This is the essence of winemaking, which in our area plays a fundamental role as an expression of the local reality. Our native grapes are Negroamaro, Malvasia Nera, and Susumaniello, a unique blend that gives the wine an intense aroma of plum and blackberry, with a harmonious, warm, and velvety taste.

Olive and Oil

One of the fundamental pillars of our cuisine is undoubtedly extra virgin olive oil, also known as the “green gold of Salento”, not only for its characteristic color but also for its ability to enhance every dish and for its beneficial nutritional properties for the body, which have always made it a symbol of wealth and well-being.

Among the different varieties of olives widespread throughout the Salento area, the one to which our family has been dedicating itself with passion and professionalism for years, following the principles of organic farming, is the “leccina”, a type of olive particularly resistant to the main pests of the olive tree, from which a fruity and golden yellow colored oil is obtained, which is characterized by its lightness and delicate and balanced taste.

In our estate, the olives are harvested exclusively by hand, between the end of October and the beginning of November, but the olive harvest and the subsequent tasting of the freshly squeezed oil are not just fundamental stages of the oil production process for us, but also a ritual that every year marks the end of the harvest season and opens the doors to a new year of work

Garden and Vegetables

Following the seasonality of each individual product and respecting the rhythms of nature, in our vegetable garden we cultivate vegetables with intense flavors and aromas, ideal for a healthy and balanced diet and always undisputed protagonists of our cuisine.

Bees and Honey

From the hard work of our bees we obtain a delicious honey. It’s the true essence of the territory. Thanks to the collection of nectar, bees make us taste the flavors of our land. They are beautiful to watch when the sun’s rays are low, they are full of honey, satisfied and calm. The beehive emanates the scent of honey and you can hear the vibrant sound of thousands of bees.
